The only projection where all straight lines look straight is rectilinear. Rectilinear photos ("wide angle") start to look weird with angles > 120 degrees, and it is principally impossible to create a rectilinear image with a field of view of 180 degrees or larger. You are going to have to compromise on the field of view, or accept distortion to some degree.
